WOODEN HAND BREWERY
WOODEN HAND BREWERY

Started at its current location in 2004 (Truro in the South West of England) Originally producing 8 barrels a month, two years later Wooden Hand Brewery produces upwards of 100 barrels per month with 4 different types of Ale.

With Wooden Hand Brewery came the introduction of 4 new Cornish Ales. First only Cornish Mutiny and Smuggles Gold were brewed but after 5 months and 360 casks brewed and so by the end of 2004 3 Ales were being brewed with total sales of 653 casks. Currently for 2007 until September we have sold more than 150,000 litres.

The colour and flavour in Wooden Hand Beer comes from malted barley which is milled to a course flour called ‘grist’.The traditional cylindrical mash tuns made from metal and wood and are fed with the grist and mixed with hot liquor ( brewers speak for water !). This process is referred to as mashing. From this a sweet liquid forms which is called wort and is separated from the used grains. The wort is then pumped into large cylindrical vessels called coppers, and hops are added before boiling to add bitterness and aroma to the beer. Each different beer has its own special recipe of ingredients. The wort is boiled until the full taste of the hops has been achieved.

After cooling, the wort is transferred into fermentation vessels rectangular shaped for cask-conditioned ales, Yeast is then added and fermentation begins. The yeast begins to multiply rapidly as it feeds on the sweet wort, converting the sugars into alcohol and carbon dioxide. When fermentation is complete the yeast is drawn off for re-use and the beer is allowed to mature in ageing tanks. The beer is chilled and stored to allow a more smoothed flavour to develop.

Our ale brands are live products and are racked into casks, where secondary fermentation takes place, in time to deliver you a perfect pint. Wooden Hand Brewery has a bottling line enabling these cask ales to be enjoyed in perfect condition for up to 6 months after brewing.
